- Distinguish from food intolerance - non-immune, dose-dependent, no anaphylaxis risk (lactase deficiency, FODMAP, histamine)

- Birch/grass pollen sensitised, itchy mouth with raw stone fruit, apple, carrot
- Destroyed by cooking; systemic reaction rare
